The famed Camino Verde Estate, nestled between the foothills of the Andes and Pacific Ocean, is a beautiful farm owned by Vicente Norero. With Norero’s deep understanding of fermentation methods he produces a variety of flavor profiles, using yeasts to push specific flavor precursors forward in the beans. Camino Verde is one of the first farms in the world to use inoculants and efficient microorganisms during the fermentation to accentuate flavors.

Kokoa Kamili, in the Kilombero Valley of Tanzania, works to support three fundamental principles. These principles are that Tanzanian cocoa has the potential to be amongst the best in the world, cocoa has the power to drastically improve small shareholder farmer’s income, and always considering the question of implications of cocoa in economic development in the region and community. Owners Brian LoBue and Simran Bindra use these fundamentals to create both socially responsible and quality controlled cocoa, working with over 1,500 small shareholder farmers.

The legendary San Juan Estate was established in 1870 and has since held exclusivity with Valrhona, who made the first single origin chocolate bar with their phenomenal beans. Meridian Cacao is one of the first distributors given access to share these beans with chocolate makers worldwide. San Juan Estate cocoa is graded and polished, using an antique grading machine the estate has used since 1905. Vietnam / Tien Giang

Meridian Cacao Company has teamed up with Saigon-based Marou Faiseurs De Chocolate to distribute their supply of hand selected Vietnam cocoa. Marou works directly with family owned cocoa farms across Vietnam. They provide these farms with technical support and financial assistance, purchasing the cocoa well beyond Fair Trade cocoa prices. Tien Giang Cocoa is grown by farmers in the Cho Gao Cooperative in the Mekong Delta; it is a full-bodied chocolate is characterized by notes of spice, brown fruit, and honey.
